Stir-Fried Beef, Asparagus & Green Beans

Everyone craves the flavors of soy sauce, ginger, green onion, and sesame seeds – not to mention the amazing aroma. The good news is that you can create all that goodness at home with this recipe for Stir-Fried Beef, Spring Onion, Asparagus, and Green Beans. It’s so easy easy to make that you will be able to clean out that draw of to-go menus!

Yield: 4 Servings

Total Time: 25 Minutes

Prep Time: 15 Minutes

Cook Time: 10 Minutes

Ingredients:

2 tablespoons extra-virgin olive oil
1 1/2 lbs lean rump steak, sliced thinly
1 inch piece ginger, peeled, sliced
8 oz green beans, trimmed and sliced
8 oz asparagus, trimmed, sliced
1 red bell pepper, diced
1 yellow bell pepper, diced
6 spring onions, sliced
2 tablespoons soy sauce
2 tablespoons toasted sesame seeds
4 cups steamed brown rice for serving

Directions

Heat half the oil in a wok and fry in beef for about 5 minutes or until browned. Transfer to a plate.

Heat the remaining oil and fry the red onions for 5 minutes or until fragrant.

Add green beans, asparagus, red bell pepper, and yellow bell pepper. Fry for 3 minutes, then add spring onions, sea salt, and pepper. The, fry for 2 minutes and return the beef. Fry until the veggies are tender. Stir in soy sauce and remove from heat.

Serve over boiled brown rice and topped with toasted sesame seeds.
